Salted Caramel Chocolate Tartlets


Dear bought me a Kenwood mixer and it comes with a free Baking Demo at TOTT.

I choose to go for the Christmas Baking and here is my art work after 7hrs...

The chef used 2hrs to bake 2 pastries :- Log cake and Tartlets

During the making of caramel, there is a small eruption when I try to pour cream to the melted syrup

other then making the caramel 

Making shell and truffle are not so tedious...

But super sinful pastry.

Bacon Aglio Olio

1 Pack of NTUC Streaky Bacon, cut into small stripe
10 cloves of Garlic, thinly sliced

Spaghetti or Pasta

Boiled a pot of water with 3 tsp of salt and 1 tsp of olive oil

Cook Spaghetti for about 7 to 8 mins

Put Bacon into HCP fried till crispy, 

Half way thru add Garlic, fried till crispy brown.

Add Spaghetti to the Garlic and Bacon and mix well

Add Parmesan Cheese while serving

Pullman Bread

Cold Dough ( I do it in the morning at 5.30am make my dough at 6.30pm - 13hrs)
100ml water
150ml bread flour
1/4 tspn of yeast (mix using a spoon - I used the measuring spoon)

Main Dough
Fill up 1 cup of (whipping cream + milk + egg) my measurement is 40ml whipping cream + 1 egg + fill up the cup with milk to 200ml
2 cup Bread Flour 1/2 cup Cake Flour
Cold Dough
1 1/4 tspn yeast
4 tbspn of Sugars
1 tspn salt
2 portions of butter (about 50gm) ( I cut whole pc of butter into 10 portions)

After 2 cycles of dough mixing, I cut them into 4 portions

3 into the pullman tin and 1 portion to make bun.

Wet the dough and let it raise till fill up about 95% of the tin, set temp to 200C for 50mins...

*** This is my 3rd attempt to make this bread, failed 2 twice, but now I am happy with the result, bread is very fluffy and soft.

Chicken Rice

Rice :-
Oil,Garlic,Ginger,Onion,A bit of Salt,Pandan Leave,A bit of Chicken Skin

Stirred Fried it till fragrant add in rice and water cook in rice cooker

**Hubby say fragrant but tasteless, told him the sauces and chicken are salty not recommended to add more salt to the rice.

Chicken :-
Pre-salted half Chicken ( I clean it and rub with salt when I bought from market)
Wash it and rub with a bit of salt
Put into the rice cooker steaming plate with a small plate to collect some sauces
When chicken is ready rub with a bit of salt and sesame oil

Soup :-
Using the same pan for frying add in water, a pack of miso paste, vege, tomato, carrot to boil.
Mixed pre marinated mince meat with prawn and make into meat ball.

Sauce :-

  • Non Spicy Sauce :- Oil, soy sauce, ginger, garlic, onion, spring onion, sesame oil and sauce from steam chicken
  • Spicy Sauce :- Add the above + Putian Chilli + 1 fresh chilli

Add some of the non spicy sauce to the cooked chicken...

Ready to serve

**Justen ate most of the chicken as he felt that is too yummy...

Took about 45 mins to prepare the above
**Using Multi Grain for chicken rice & Free Range Chicken

Spaghetti and Mushroom Cheese

Ingredient A
Garlic Oil
Butter
Bacon
Sausage
Onion

Ingredient B
Broccoli
Mushroom

Ingredient C
1 can Mushroom soup
1 pack of Cheese
1 can of water

Ingredient D
Pasta or Spaghetti
Water
Oil
Salt

Add ingredient A to cook till brown, add ingredient B and mix well.

Add Ingredient C till and boil

Separate Pot add ingredient D cook Spaghetti for 12 mins.  Pour away the water.  Add Ingredient mixture od ABC to spaghetti and cook till soft.

Hongkong style Steam Fish

Plan to steam fish, so I Google around to get the best and easy recipe...

Finally decided on Hongkong Style Steam fish.

I put some spring onion below the "wu yu" with I rubbed with some salt, put the bowl into the boiling water and cook for about 8 mins...

The fish is nicely cook, I pour away the steam water and remove the spring onion.

I put 1 tablespoon each of soy sauce, water and wine + 1 tsp of sugar/ 1 pc of small rock sugar

Put into to cook, add in spring onion.

Pour the liquid onto the fish, add some Garlic Oil

Super Delicious...

Sambal Sotong and Prawn

Sambal Chili made by my MIL
4 table spoon of Pasta Sauce
Boil Sotong and Prawn in hot water, rinse...
Add Sotong and Prawn to sauces...
Add Lemon Juice about 2 table spoon

Serve when hot
